Panels on the distillery roof generate electricity for production. When more is needed, the electricity we use is covered by a renewable energy tariff.

We grow the potatoes at Colwith Farm, distil the spirit here in Cornwall and blend it with mineral water drawn from beneath the land. The result is rounded, gently creamy and lightly sweet.

WHAT PLOUGH TO BOTTLE MEANS
We grow the potatoes. Then we make the vodka.
By “Plough to Bottle”, we mean that we grow the potatoes and make the vodka from scratch at Colwith Farm. We do not begin with bought-in spirit.

Grown at Colwith Farm
About five kilos of our potatoes go into every bottle. They travel no more than five miles from field to distillery.

Fermented and distilled here
We turn the potatoes into spirit in the distillery on the farm.

Blended with our mineral water
We draw water from the farm’s aquifer, the underground source beneath our land, and use it to bring the vodka to bottling strength.

Bottled on the same estate
The finished vodka is bottled here at Colwith Farm.

The Dustow family has farmed at Colwith since 1904. Today, Steve Dustow runs the distillery while the family continues to farm the land around it.
Growing the potatoes and making the vodka on the same estate gives Colwith close control over the raw ingredient, the process and the finished spirit.
HOW THE DISTILLERY FITS INTO THE FARM

Rainwater cools the equipment
Harvested rainwater is used in the stills’ cooling system before returning to the land.
Stillage returns to the land
After distillation, the spent potato liquid, known as stillage, is spread back onto the farm’s grassland.
THE PERFECT SERVE · VODKA LIME SODA
Tall, cold and very simple.
Soda lets Aval Dor’s soft texture come through, while lime cordial adds a bright, zesty lift. Easy to make, and light and refreshing.
50ml Aval Dor Original Vodka
50ml Lime cordial
150ml Chilled soda water
Garnish Lime twist
Fill a tall glass with ice. Add the vodka and lime cordial, top up with soda and stir gently, then finish with a twist of lime.

Does potato vodka taste of potatoes?
No. Potatoes are the raw ingredient rather than the finished flavour. Aval Dor is soft and clean, with gentle sweetness and creamy vanilla undertones.
Why make vodka from potatoes?
They are the crop we know. Using potatoes grown at Colwith lets us begin with our own raw ingredient, make the spirit from scratch and keep production on the farm.
Is this the Original or Vanilla Vodka?
This is Aval Dor Original Vodka. Its creamy vanilla undertones are tasting notes. Aval Dor Vanilla Vodka is a separate product.

One 70cl bottle of Aval Dor Original Cornish Potato Vodka at 40% ABV.
